How much should I save for a 2010 Kawasaki Ninja 250r?

If your credit rating at 20 is over 700, I would think you will not need a co signer. General rule of thumb, the more you put down, and less you need to finance, the better. $1000 would be fine for a down payment. I put down $500 on my 2010 ninja 650r.
